Welcome to the Food Safety and Quality Teams Pick, Pat, Preserve Food Preservation video series. In this video, we will learn how to use a pressure caner. Let's get started. Today, we're going to learn how to safely pressure can vegetable soup, which is a combination of high and low acid foods. Pressure canning is the only safe method for canning combined low and high acid foods. I am using a recipe from the National Center for Home Food Preservation for mixed [music] vegetables. You want to make sure you use approved tested recipes. First, let's get what we need. Pressure caner, canning jars, lids and ring bands, jar lifter and funnel, canning salt, which is optional, bubble wand or spatula. Single use damp paper towel for wiping your rims. Knife, peeler, timer, a clean dry dish towel, cutting board. Let's get our pressure caner ready. Add 2 to 3 in of hot water in the bottom of your pressure caner or follow your manufacturer's instructions. I will be using a dial gauge caner which should be tested annually. Once caner is on the stove. Let's set the heat to low. I have washed, trimmed, sliced, [music] and cubed the vegetables as described. They were combined in a large pot with enough water to cover the pieces and boil for 5 minutes. Individual vegetables can [music] be raw or hot packed, but these will be hot packed since they have been precooked. If you want to add meat to your vegetable soup, it must be cooked first. If you want to use dry beans, they must be first rehydrated following specified instructions such as from the National Center for Home Food Preservation or another reputable source. [music] When canning individual vegetables, follow approved recipe. Let's fill our jars. Using your funnel, fill clean hot jars with the mixed vegetables [music] and liquid, leaving 1 in of head space at the top. This is recommended to [music] ensure proper heat distribution in the jars. If you like, you can add half a teaspoon [music] of canning salt per pint or one teaspoon per quart just for flavor. Now, let's get our jars in the caner. But first, debubble [music] by gently sliding a spatula or bubble wand along the inside of each jar and wipe rims with the singleuse damp paper towel. Place your lids on the jars and tighten the screw bands fingertip tight. Now, we're going to put our jars in the caner. So, using your jar lifter, place the hot jars on the rack inside the caner. Be sure not to tilt the jars. Lock your lid into place using your caner's manufacturer's directions. Don't put the weight on yet, but increase your heat source to high. Now, one of the things you have to do is to let your caner vent steam steadily for 10 [music] minutes. This step pushes out the air, creating a pure steam environment for the proper [music] temperature. Once we have vented for 10 minutes, we're going to place the weight on the vent pipe. Bring the pressure up to 11 lb for the dial gauge. Once it reaches pressure then we start [music] timing and it will be 75 minutes for pints which we are doing or 90 minutes if you do quartz. [music] Maintain steady pressure throughout processing by monitoring the heat source. [music] Don't get distracted as this could result in an improperly canned product [music] which may or should I say will require reprocessing. Once we have processed the necessary time, turn off the heat and let the pressure drop to zero naturally. Don't force cool it. That can cause liquid to siphon out of the jars. Once our pressure has dropped to zero, remove the weight for more release. Then carefully remove the lid, opening it away from your face. Use the jar lifter, being careful not to tilt the [music] jars. And place the hot jars on an insulated surface such as a towel. Don't place the jars on a cold surface or an extremely hot surface to [music] prevent breakage. Let jars sit undisturbed for 12 to 24 hours. Then check seals. Lid should be firm and not flex when pressed. Wipe jars clean with a damp cloth and label with the date, preferably the date that you prepare it. Remove bands before storing in a cool, dark location. If jars do not seal, place them in the refrigerator and consume them within 2 to 3 days. properly cooked before consuming by bringing them to a rolling boil for at least 15 to 20 minutes. And when I say the rolling boil, that's the product. Remember, always follow USDA approved pressure canning guidelines for safety and happy canning.
