For my breakfast this week, I am making
a hash brown crust breakfast pizza. I'm
actually quite excited for this recipe.
So, you are going to need frozen hash
browns thawed, or you could use the
simply potato hash browns, salt and
pepper, butter, bacon, eggs, shredded
cheese, and some ham. So, on a pizza
stone, you could do a pizza pan, you're
going to take your thawed hash browns,
and we're going to spread these out on
the pan, basically making a crust.
And then I've got 2 tablebspoon of
melted butter. We're just going to
drizzle that over the hash browns.
And then we're going to sprinkle on some
salt and pepper. My oven is preheating
to 425°.
We're going to bake our crust for 20 to
25 minutes. I went ahead and scrambled
four eggs, added some salt and pepper,
diced up my ham. I did precook my bacon
and dice it up, but I am going to toss
it in the pan before I put the eggs in.
If you're using regular bacon, you do
want to cook that first. I added my
bacon to a skillet. I'm just going to
let it get a little bit more crispy and
then we're going to add our eggs. Then
we're going to add in our eggs and
scramble those with the bacon.
You're going to pull your crust out of
the oven. We wanted the edges nice and
browned. And then we're going to add our
scrambled eggs evenly on the crust.
Then we're going to sprinkle on our
diced ham.
You can add any toppings you want. You
could do mushrooms, onions, green
peppers, whatever you would like. And
then we're going to top it with 1 cup of
shredded cheese.
And we're going to pop it back into the
oven for about 20 to 25 minutes. You
want the cheese cooked through and nice
and bubbly. Oh my goodness, this looks
good. Our breakfast pizza is out of the
oven. We're going to let that cool
completely and then you can slice it up
for breakfast. I think I'm going to pair
this with some fruit. For my lunch this
week, I'm making a ham and cheese
crescent roll up. I'm very excited for
these. I think Troy is going to love
them. You're going to need a can of
crescent rolls, garlic powder, dijon,
honey, butter, cheese of your choice,
and some ham. So, the first thing we are
going to do is unroll the crescent rolls
onto a clean surface.
And then we're going to take our ham and
place it on the wider part of the
triangle.
And then we're going to fold the edges
over the ham.
And then we're going to take our slice
of cheese and lay that over the ham.
Half of a slice per crescent roll.
And then we are going to roll it up. I'm
just going to take the skinnier end and
just roll that right around the cheese.
And here is what your little rollup
should look like. So into a bowl, I've
melted 2 tablebsp of butter. We're going
to add a tablespoon of honey,
a tablespoon of dijon,
and some garlic powder.
And then go ahead and give that a good
mix.
I have a quarter sheet pan. I'm going to
add some parchment paper. And then we're
just going to place our crescent rolls
on the sheetpan. Make sure you leave a
little room for them to expand when they
cook. And then we're going to take that
butter mixture and we're going to brush
it on our crescent rolls. We want to use
all of it, so really get them nice and
coated.
We're going to bake these in the oven
for about 12 to 15 minutes at 375°.
Look at how freaking good these look.
These are the crescent rolls. Once that
cheese cools, it'll be just a nice
cheesy bottom to the rolls. Of course, I
will have the original recipe down below
for you. For a sweet treat this week,
I'm making apple butter snicker doodles.
I am going to omit the glaze only
because we don't eat them right away and
I feel like if you glaze them and let
them sit, it gets soggy. So, I'm going
to omit that part. But you can make
that. I will have the original recipe
down below. So, you're going to need
sugar or sugar substitute of your
choice, allpurpose flour, cake flour. I
have sucrin gold for my brown sugar
substitute, vanilla extract, apple
butter, cream of tartar. I'm doing
pumpkin pie spice in place of nutmeg and
cinnamon, baking powder, one egg yolk,
salt, and cold butter. Into a bowl, I'm
adding 2 cups allpurpose flour, and 2/3
of a cup of cake flour, of baking
powder. Oh, I'm glad I just looked at
that. We need 1 and 1/2 teaspoon of
baking powder, and then a teaspoon of
baking soda.
one and 1/2 teaspoons of cream of
tartar,
cinnamon and nutmeg, and some salt.
Go ahead and give that a mix and set it
aside.
To a bowl, I have 1 and 1/4 cup brown
sugar substitute packed. I've done 12
tablespoon of butter and just kind of
chopped it up. You want it nice and
cold. Using your handheld mixer, you're
just going to combine
So, I don't know why it calls for cold
butter. I couldn't get it to
incorporate, so I warmed my butter just
a little bit. And then we're adding in
a/3 cup of apple butter, one egg yolk,
and then give that another mix.
And then we're adding the wet
ingredients to the dry ingredients. And
then you're going to mix just until
combined. You do not want to over mix.
We're going to line a baking sheet with
parchment. Here is our dough. Go ahead
and scoop that out onto your baking
sheet.
I'm going to grab a second baking sheet.
Do the same thing. We need to chill this
dough for 30 minutes to an hour. 1 hour
later.
>> I took my cooled cookies out of the
fridge. I have some sugar and cinnamon
mixture. We're just going to lightly
roll those in that mixture and place
them back on the baking sheet.
They're going into a 350° oven for about
15 minutes or until they are soft and
bubbly. That's when you want to pull
them out. The apple butter snicker
doodles are out of the oven. At least
the first batch. The second batch I just
put in. Oh my, these look amazing. I did
take my hand and kind of push the dough
down while they were cooking because
they kept that ball shape and I wanted
to make sure they got cooked completely
through. But I will put the original
recipe down below for you.
