For my breakfast this week, I am making
a bagel breakfast slider and I am stoked
for these. So, you're going to need some
mini bagels, light cream cheese, bacon,
milk, eggs, shredded cheese of your
choice, chives, garlic salt, butter,
salt and pepper. Now, it does call for a
few other things. I omitted those, but I
will have the original recipe down below
for you. I'm going to throw my bacon in
the microwave. Mine is pre-cooked, so
I'm just going to get it nice and
crispy. Into a bowl, we're going to
crack eight eggs.
And we're adding in about a quarter cup
of milk and we're going to whisk
together until
fully combined.
If you're not using pre-cooked bacon,
you would cook your bacon and then we're
going to add our egg mixture and we're
going to just let these scramble and
then the last couple minutes we'll add
in some salt, pepper, and chives.
We're going to add in our salt, pepper,
and chives.
I greased my 9 by 13 baking dish. We're
going to put the bottom half of our
bagels in the dish.
Then we're going to spread our cream
cheese
on the bottom.
And then we're going to put our egg
mixture on top of the cream cheese and
just divide that evenly amongst the 10
halves.
Then we're going to add our bacon.
And then you're going to just sprinkle a
little bit of cheese right on top.
And then go ahead and add the top of
your bagels.
Into a bowl I added some butter, a
little bit of garlic salt. We're going
to melt that and then brush that on top
of our bagels. I'm just going to kind of
put that right on top.
I'm going to pop these in a 350°
oven just until that cheese is melted.
The breakfast bagel sandwiches are out
of the oven. Oh my goodness, I cannot
wait to have these this week. I'm going
to pair mine with some grapes. For my
lunch this week, I am making mini
lettuce wraps. These are going to be so
quick and easy to grab. You're going to
need some small romaine lettuce leaves,
light mayonnaise, avocado, turkey,
cheese of your choice. I'm doing Colby
Jack and of course some bacon. So we're
going to take half of a lettuce or one
lettuce leaf. We're going to put our
mayonnaise right in the bottom.
We're going to add our two slices of
turkey,
half of a slice of cheese,
and then our avocado, but I'm not going
to add the avocado until I go to eat the
sandwich because it'll just turn brown.
And then lastly, we're just going to add
half of a slice of bacon. Now you can
roll this and toothpick it closed. I'm
actually going to take a second
lettuce leaf
and put it around, put it on top, and
then I'll wrap it up in some
plastic wrap. That way when I go to eat
it, I can add my and then we'll put
these in the fridge. You can have one,
two, three, however however many you
would like for your lunch. So let's go
ahead and make one more together.
Put your mayonnaise into your bottom
wrap. Add your turkey,
add your cheese,
your bacon, your avocado,
and then add on
the top. And again, I'm just going to
cover it with some plastic wrap. We are
going to make one of my favorite
summertime treats. It is a whole
whopping five ingredients. It's
basically a pistachio
fluff salad or a Waldorf salad.
You need whipped topping, chopped nuts.
You can do walnuts or pecans, pistachio
instant pudding, crushed pineapple, and
mini marshmallows. So, into a medium
bowl, you're going to add your can of
crushed pineapple.
And then, you're just going to stir that
to mix.
We're going to add in one cup of mini
marshmallows.
Give that a stir.
Half of a cup of our pecans.
And then, one container of thawed Cool
Whip.
And then, you're just going to mix that
together.
I have a few maraschino cherries in my
fridge. I think I'm going to go ahead
and add those as well. There we have it.
You're going to go ahead and put that in
the fridge until you're ready to serve
it.
