Video summary
The family embarks on a fishing expedition with the specific goal of catching four trout to cook over an open fire at their campsite after days of technical river fishing. Initially struggling in low-flowing streams where they feared depleting local populations, they shift focus to stocked ponds and roadside lakes that are teeming with rainbow trout. The day presents significant challenges as both parents and children face numerous missed bites and lost fish while experimenting with various lures, including spinners, nymphs, and dry flies. Despite the frustration of losing many catches due to slippery hooks or sudden strikes by wary fish, they eventually succeed in landing enough dinner through a combination of persistence and family teamwork.
Once back at camp, the father demonstrates how to clean the fresh trout using only a pocket knife, emphasizing that filleting is unnecessary for small game fish like these stalker trouts. The preparation moves into an outdoor kitchen where cheese grits are cooked as a side dish, utilizing buttery milk-based consistency and homemade seasoning cubes since traditional shredded cheese was unavailable. The main course consists of the trout being pan-seared in generous amounts of melted butter with a heavy coating of lemon pepper seasoning to create a crispy crust on the skin while keeping the meat moist inside.
The final scene captures the family enjoying their hard-earned meal, highlighting the delicious combination of cheesy grits and seared rainbow trout seasoned with lemon pepper. Although some members initially hesitate at eating the fish skin or bones, they ultimately enjoy the omega-rich dish prepared in a rustic wilderness setting by a creek-side campfire. The video concludes with reflections on how this outing fostered family bonding through shared effort rather than just technical skill, marking a memorable summer camping experience that differs from their usual fall elk hunting trips and reinforces the joy of simple outdoor living.

Welcome back, Danglers. So far, we have
set up base camp. We have done some
technical fishing. just what I dreamed
about doing up here in some of these
rivers and streams, euro nymphing, you
know, casting dry flies and all that
stuff. It's been really fun, but we have
yet to do a catch and cook with some of
these trout. And a mountain trout, come
on, man. Some of the best eating around.
And I didn't want to keep any of the
fish out of these small streams and
rivers. The the water's so low right
now. And I could already tell I was I
was catching some of the fish that that
had already been caught. We're going to
go to a different place today that has a
couple of ponds that the state stocks
with rainbow trout. Ben caught his uh
his first trout with me, I guess, on the
on the fly. I let him reel a trout in.
He loved that. And he's just been asking
like, "Hey, Dad, when can we go when can
we go fishing again?" And I've been
doing such technical fishing here on the
river. This is a perfect opportunity to
let the kids learn some new techniques
and break out some of that spinning gear
that I brought. whipping up the fly on
those lakes and throwing the spinners
and getting bit by those trout. I enjoy
the heck out of it, too. So, our goal
today is to try to get four fish to
bring them back to eat at the campsite
tonight. Cook them up in this beautiful
wilderness setting. So, let's go.
All right, Ben, you take these. So, I'm
going to put them in your pack.
>> Okay.
You have the stringer and lures.
All right, Ben. We got to catch dinner.
Let's get to work.
About like daddy's doing it.
Yeah, that's good speed right there. Oh,
see him coming to the top, Ben.
>> Yeah. Get that grass off of there.
>> Oh, he's trying to eat it. Oh.
All right, folks. We we have made a
switch to the old pistol Pete here.
We've got a clear
uh submersible bobber. It's adjustable.
And I have a spinning fly.
I'm going to see if we can attract one
out here. Oh, I just saw one surface.
I really hope this works because I have
tried the dryfly. I've tried a nymph.
I've had two bites on a nymph. Missed
them.
Stephanie has actually been throwing a
little spinner. She had one follow it,
but no one is hooked up yet, and we need
four, so it's it's time to get going.
I'm going to try a steady retrieve.
Definitely seeing trout come to the top.
Ben is currently taking a poop. He was
casting really well and then he decided
he needed to poop. Oh. Oh, I just had
one swipe. Just had one swipe. Steady
retrieve, baby. Let's go. Let's go.
Let's go. Keep her. Keep her, too. He's
on it. Do it. Do it. Oh my god. He
nipped it. He nipped it right at the Oh,
he's right there in the backwoods with
OSG.
They're They're literally everywhere.
Just got to find what they're eating.
>> Oh, this thing's trying to hit my
bobber.
No. Hit the fly, you goob. You say it's
frustrating.
>> Yeah. Imagine doing this for a living,
not being able to catch fish. I'm going
I'm going bobber wacky rig
>> like bright orange. This should be
stalker candy. Look at the Look,
look at these 12-in stalkers. Just
look at that. It landed on one.
Dad,
>> you're right. I don't like holding a
fishing pole when that's going on.
>> We got weather coming in pretty
standard, but we're also a little higher
at about 10,000 ft right now. And it's
cooler. There's a roadside pond that
I've migrated to not far from where we
were. I'm assuming that they all have
trout and driving by it, it looked
pretty good. It's a little weird getting
down here. Not even sure if it's really
public or what, but I want to take some
of these hard baits and see if we can
get bit in here. See some action here.
Oh, got one right away. Have one right
away.
Oh yeah, we're on. We're on.
Came off. God damn it.
Yeah,
trout stuff.
Definitely have some fish in here. It's
just a matter of
keeping them on the line, putting them
on here. Might be able to get my forge
right here off the highway.
Oh, there we go. We're on. We're on.
We're on. We're on. We're on.
Keeper trout on.
Oh my gosh. It came off.
They just fight like the dickens.
It's time, my friends, for the whirly
bird.
Throwing this little super duper. It's
gotten some bites.
Quarter ounce probably preferred, but I
have a 3/8 right here.
Oh yeah, getting hit. Just a little too
big for him, I think.
Got him. I'm on.
I'm on, baby.
Yes.
Come here.
Don't you get away.
Gosh, I've had so many bites. This is
the only thing I can.
Only thing that I can land them on.
Okay. Pat's rubber legs
for the win.
Oh my gosh. Oh my gosh. No, you did not.
God, you don't have a trout on the
stringer till he's on the dam. Stringer.
Oh no, Ben.
All right, we got Ben out here. He's my
backup.
Need three more. Yeah. Bring it over
here so daddy can see. Okay. Here you
go. You're ready to go again.
>> Huh?
>> Feel how heavy that
>> Oh, yeah. It's a heavy weight.
>> Yeah, I can.
>> Here you go.
>> You want to be done?
>> Okay.
Oh, I just had one. No.
All right. Please don't scare the fish
off.
OSG on. Bring him over here.
>> Yes. Come on.
>> Look at you go.
>> I was here for 5 minutes and he's been
here for two hours.
>> Is it a rainbow? What is that?
>> That is Yeah, it's a rainbow.
>> You just fell off the hook.
>> Okay.
>> Well, Ben, you can get the next one.
Man, you got to be patient. Okay,
>> that's a nice one. That's a good eater.
>> Yeah, I need a good picture with that.
No, I Mama caught that one by herself.
>> Mama did that all by herself. That was
sheer will determination.
>> How do you hold him?
>> Oh. Oh gosh, he's a jumper.
>> The real slippery. Like he'll fall.
It'll 100% 100% slip out of your hand.
>> Okay, then I won't.
>> Here, let's get some photos like this
with the net.
>> Hey,
>> there you go.
>> Good job, guys.
Two.
>> We got two. I mean, we're good.
>> Thanks to you.
>> One more would be great.
>> I've lo I lost every single one of them.
You got the touch.
>> Tell us your secret.
>> I don't know. I'm just reeling it up. I
feel like they're they're following the
the What is it? What What's on here?
>> The little toenail clippers.
>> Yeah, it looks like nail clippers. They
keep following it all the way up. I can
hear I can feel them hitting it. And
then as soon as they see me,
oh, I got a twig. As soon as they see me
up here, they just they vanish.
>> They like to follow.
>> They do. They follow it for a long time.
>> I had six on the the nail clipper, but
and I had two on the whirly bird. Landed
none,
>> man.
Now we got a situation over here.
>> What do we got?
>> He says he's got to poop his pants. You
got a poop.
>> I I pooped in my pants.
>> You did?
>> Oh no. See, see, see. It followed all
the way up.
>> Yes. And as soon as he saw me, he turned
around.
>> I got to get back in the game.
Come
on.
And he's off.
God damn it.
We're on
small trout
landed. Well, he is not much of a meal,
but we'll take him.
>> I just had a good one and then I lost it
and then I caught this little one.
>> We're on
Last one of the day,
kids.
Kids are going down.
Oh my gosh, I lost him. Okay,
you got to be joking me.
Well, I'm going back.
Fishies,
hold your breath.
Holding.
I'm glad I didn't hold my breath for
those fish. First ponds we went to. They
were not good. There was a lot of dead
ones around the bank. OSG. Just
determined to catch a fish. She had
quite a few follows there. We ended up
packing up. We were going to go
somewhere else. Found this roadside
pond. Uh it was it was loaded with
rainbow trout. I said, "This is this the
stalkers we need to get our dinner." So,
ended up getting like maybe a dozen
bites, but only landed three. I had to
resort to the fly rod just to get some
fish to to come in. I had the fourth one
on right there at the end. He just
popped off. I could already taste his
little little rib cage and he came off.
Luckily OSG coming in clutch with the
biggest trout. We're going to get our
Colorado Rocky rainbow trout on. So,
let's head back to camp
by the creek side with OSG.
Trout are pretty easy fish to clean. You
know, I don't really like to fillet the
meat off the bone because you're missing
out on on quite a bit, you know,
especially talking about these little
stalker trouts. And you don't need a a
fillet knife or anything. So, I'm just
going to use a pocket knife. This is my
my oldtimer
in 1095 carbon steel.
Good little cape knife. Cut my steak
with it last night. Now, I'm cleaning
dry. So, a little incision right behind
the the noggin there.
And then uh just go up from the the rear
vents.
Oh, look at those eggs.
>> Oh,
>> look at the eggs coming out.
>> Oh, no.
Oh. Oh, I feel bad. That's a lot of
people trout.
>> It's a lot of trout that are about to be
eaten by the trout down river here.
So, pull pull that whole situation out.
Toss it aside.
Uh, it's always nice having a stream
where you can have running water to do
this.
And I suggest you do it pretty quick. We
waited a little bit, so we had to drive
back to our campsite, but
we didn't have ice.
That's one
All right, I'm going to show you how to
clean a trout. All right, dude.
>> Cut it right behind the head right here.
About halfway down
and then take the insides out. We're
going to go up from the vents
up there and then
put our finger in here and pull down.
All that comes out together. You see
that?
>> Yeah.
>> Throw that away.
Clean our little trout off.
>> You want to see how bad that excited
We take out the middle all the all the
yies.
All right. Always clean and dry your
knife.
Put it away.
And now we take him to the butter
in the outdoor kitchen.
OMG.
She's concocting right now.
>> I am. I'm going to try to figure this
out because we don't have shredded
cheese anymore and we don't have I
forgot to bring like green chilies like
a can of green chilies.
>> And she's talking about them cheese
grits
>> cuz cheese grits with any kind of fish
make it exceptional.
>> Exceptional.
>> Anyway, she tells me grits are kind of
hard to find. So
>> they are. If you find them, buy them in
bulk.
>> Yellow grits. Have you ever cooked a
fish that you've caught like this fresh?
>> This might be a first, right?
>> This might be a first.
>> This pan right here. Whoa. This pan
right here is uh is one that I found in
the creek behind our house and I cleaned
it up and it's been a great little pan.
Don't tell them that
>> what?
>> It's kind of gross.
>> It's resourceful.
I don't know that the kids are actually
going to eat any. So,
>> probably not.
>> It's up to you and me.
>> Got to get them full of that little
butter grease.
>> So, you just keep adding the butter.
>> No, you add the milk.
>> This is why I'm in charge, not
>> I don't know how to make grits, but I
know how to make some fish happen.
>> There you go.
>> Smells good already.
Going with the pelamuk square packets.
>> I am. Instead of shredded cheese, I'm
going to have to like cube them up.
Okay. But the thing is I have to keep
like stirring this. It's kind of like
risoto. You just got to keep stirring
otherwise it'll burn and stick.
>> Process.
>> Oh yeah, it is. Takes a minute.
It's got a nice like cheddar popcorn
taste to it. It's awesome.
Grits are on rest.
It's time for the trout.
>> Lemon pepper.
>> Are you in suspense?
>> Yes, I am. It's very suspenseful
>> cuz you only got about a minute before
that butter starts burning.
>> How about that? How about about half
that bag of lemon pepper all up in
there?
>> It's not batter.
>> That's a lot of seasoning.
>> I want to hear it from the peanut
gallery over here.
>> Well, let's just say those are nice and
coated. Mhm.
>> Just hush.
>> Trying to make a catch and cook video.
Lance,
>> I mean, someone's got to tell you how to
do it right. Okay. All right.
>> I don't get hot.
>> That butter is perfectly brown.
Turn it down a little bit.
Now, we're going to add our fish,
which we have generously lemon peppered.
>> Generously. I've never poured half the
bottle like that in there.
>> It about looks like a cornbread stout.
>> Yeah, that's all seasoning. Like
breading, mind you. That is seasoning.
Look at that little guy.
Just swimming. Swimming about 4 hours
ago.
They're still swimming. Now they're just
swimming in butter.
Well, bam.
Oh yeah.
I'm just going to There you go.
>> A a little crusty on there.
>> Don't judge me on it. That was a little
one.
>> A little crusty.
>> That was a little
>> Hey, but you know what? It's opening up
nicely.
>> It is.
>> You're not going to eat that part
anyway. So that's
>> stay positive. Stay positive.
>> Okay. What are your thoughts on that?
>> I'm just wondering what the kids are
going to eat.
>> Looks pretty good to me. I mean, you
>> I think it's going to be good, but this
is just enough for you and me. Like,
this is not enough for a whole family.
>> Grits. See, Lance, what happens is you
you put the extra seasoning that comes
off the skins in your grits and it
absorbs it. That's how it goes.
>> Are you going to eat the skin?
>> Yeah, I'm going to eat the skin, dude.
Trying to get those omega-3s.
>> About 4 minutes each side. Steamed up.
It smells a hair a hair overdone. A hair
burnt. Hair burnt. It smells like hair
that's burnt. No, I'm scared.
>> Okay, let's do a four.
>> What?
I want to run the good one.
Mhm.
>> I want this one. I
>> think that's yours right there.
>> Wow. That's the biggest one. Are you
sure?
>> Yeah. I definitely got that little
dinker right there.
>> Okay. You know what? It adds to it. That
can be yours.
Stick it.
>> That can be yours. Crusty one.
Old gimpy. I think we need to eat it by
the camp the fake campfire over here.
>> It's peeling off nicely. Yeah, it is
peeling off nice and neat.
>> Is that Is that skin?
>> Is this fish skin?
>> Skin looks crispy. Oh, I can smell that
lemon butter.
>> Mhm.
>> First of all, let's have a completed
grit. Well, bam.
>> Got to taste this skin. It's probably
enough flavor in here to last you a full
year.
>> Oh my goodness.
>> Skin is black.
>> Is it?
>> It's fish.
>> Come on. Just take a look.
>> I don't want to.
>> Wow.
>> The skin.
>> How is it, Ben?
Yeah. Is is the rib bones. Don't Don't
poke it. Is it good?
>> Mhm.
>> Ben took my first bite.
>> You like it, Ben?
>> Mhm.
>> You're hungry, though. But, aren't you,
boy?
>> Good.
>> It's good. All right. M.
>> Yeah. It touches. I guess.
>> Here you go, M. Oh, there's
>> Well, bam.
>> Making out.
>> That's good.
>> Cheesy grits.
>> M
>> with the grit though. I don't think I
overseason it.
>> It's good.
>> It's good. Ben says it's good.
>> It's been River approved. Do you know
your middle name's River?
>> We caught these in the river.
>> I'm a fan of the crispy lemon pepper
skins.
>> Look at that. Okay. You want to show
them that? Hold it where my where I'm
holding it.
>> Okay. Go show them in the camera.
>> That's four minutes each side in the
skillet with butter.
>> Hold it a little farther down.
>> Chippy, don't go down there. There's too
many things down there. You're going to
get killed. Chippy. No. Chippy, don't go
down there. So,
>> hey, you left a little bite on there.
>> Now, that was good.
>> Crispy.
>> That crispies are good.
>> Can you say golden krispies?
>> Golden Krispies.
>> So, Golden Krispies are good
>> with Benjamin River.
>> There's no way you're not my son. Bone
removal. Moon.
>> Can I throw it out in the woods?
>> You can throw that out in the woods,
sir.
>> Thank you,
>> Ben. Do you remember catching these fish
today?
>> Mhm.
>> Yeah. Mama's eating fish.
>> That's right.
>> And
>> got my
>> I like the mom cats.
>> You like the cheesy grits, too?
>> Get the cheesy grits.
>> Cheesy grits.
>> Are good?
>> I just spit it out over there.
>> Is that good?
>> Yeah. You want another bite? He's
reviewing.
>> Yes, I do.
>> All right.
>> Anything else you'd like to report
today?
>> What What was your What was your high
today, babe?
>> What was your favorite part about the
day?
>> Trying to catch some fish and going
fishing.
>> It's about
fishing. It's not always about catching.
You're right. You made some amazing
casts today, dude.
>> Mhm.
>> With that little micro series, whipping
that little lure out there. You were
doing fantastic. You know, I don't know
if you can actually screw up a fresh
caught fish. One that's that fresh going
into the pan. A little bit of lemon
pepper seasoning. W Butter goodness. OSG
devoured it down. Caught her own fish
today. Uh the thing that's been
different about today's catch and cook
is really kind of a full family
involvement. You know, I came up here
for the first time about 8 years ago,
solo elk hunting, and just decided I got
to bring the fam up here. I got to bring
my friends up here. And it's always been
in the fall. It's the first time we've
been up here in the summer. And the
fishing is still really good. It's fun.
It's a little warmer camping, but today
was all about hanging out with family,
kicking back a little bit, doing less
technical fishing, more just, you know,
fishing some stocked ponds basically.
and I lost a lot of fish and thank
goodness the family was there to to back
me up. But the lemon pepper rainbow
trout was delicious and OSG's cheese
grits. Whether you're doing pan searing,
blackening, all that cheese grits tops
it off. And it all tastes twice as good
when you are in an outdoor scene like
this. Y'all, if you guys missed the full
camp setup initially getting here, you
go check that video out. And doing some
more technical fishing in the rivers. I
got to come back and do more of that. I
I could do that all day, multiple days,
and just sleep in a tent out here. It's
It's so awesome. We just made some
awesome family core memories out here,
and I hope you guys enjoyed watching
this whole entire series. I will see you
back in the great outdoors and beyond,
back in the steamy heart of Texas. See
you on the next video.
