We are using bananas. Everybody loves
them. It's one of the first things we
ate when we're babies.
And you know what? They're so hard to
resist when you walk into the grocery
store cuz they just look delicious. And
we all grab a few and then they get too
ripe. And I'm going to show you what to
do with them.
That's the easiest recipe ever and that
is with a yellow cake mix. This is my
banana pound cake. It does have quite a
few eggs in it. That's why it's called a
pound cake.
And it is in the master cookbook.
We are going to start out. It says four
bananas, but now I only have these three
and this one's really big, so I think
it's plenty.
So we're going to mash the banana up.
With a fork is all you need.
And they should be good and ripe.
The riper the better.
Not rotten, but ripe.
And mine were ripe.
Let's start with our wet ingredients.
We're going to use a third cup of
vegetable oil and I'm using corn oil.
We're going to use four large eggs.
There's one.
Now these are my chicken eggs and
they're different sizes. But I picked
out ones that would be equivalent to
about four large eggs that you get at
the grocery store.
And there's four.
Going to see how fast this comes
together.
That's all the liquid that's in there.
So most of your liquid comes from the
eggs and the oil and the bananas, okay?
I'm going to use a half teaspoon of
nutmeg and a half-teaspoon of cinnamon.
That was the cinnamon.
And here's the nutmeg.
Now, of course, you guys ask me all the
time, "I don't like nutmeg. Do I have to
put it in in there?" Of course you don't
have to put it in there. Uh just leave
it out.
Now, you're also going to use a cup of
chopped pecans.
All right, this is our master cookbook
and I have sections for cakes. This is
actually the section that's cake mix
cakes. It's called cake mix creations.
It's the first recipe in that section,
recipe 267.
You know what? Today, instead of using a
mixer, we're just going to use a spoon
and a fork.
So, I'm going to beat these eggs up
really good in here with a fork.
I want y'all to know how simple it is.
You don't even have to pull out a mixer
for it.
Now, you're going to add your banana
to it.
That's a lot of liquid there.
My granny used to make us one in the
summer. We'd be playing outside and we'd
say, "Granny, can you make us a cake?"
And she'd say, "I'll have one ready
directly." She would always use a
She actually used a Duncan Hines cake
mix and put extra eggs in it and made a
pound cake that way and we
loved it and she would slice it hot
right out of the oven.
We're going to add our nuts last.
Now, we're going to add
our yellow cake mix. This is a Betty
Crocker. I buy whatever's on sale,
y'all. I don't really
have a preference. If I actually had to
pick, my favorite cake mix is Aldi
brand. I just think it tastes really
good.
I just love it.
So,
that's my favorite.
I'm going to start with a fork
that I used.
And then we'll finish it off with a
spoon.
Now, I know cake mix says mix it on
medium speed for 2 minutes.
But,
when I was younger,
I just used my hands and a spoon or
fork. Really, a fork's even better
um than a spoon.
That's all you got to do.
Make sure you do a good job. I mean, you
know, beat it up against the sides and
stuff to make sure you got that
uh
cinnamon and nutmeg mixed in are good.
And it wouldn't hurt for you to take a
spatula and go around the edges and the
bottom to make sure you didn't leave any
powder
in there that didn't get mixed up.
Now, we're going to add our nuts. It's a
cup of chopped nuts.
And we're going to mix this up.
And look, that came together quick,
didn't it?
Now, we're going to spray a bundt pan,
get this in the oven, and y'all, it's
going to be super hot here today. So,
when you make a cake or when you turn
your oven on in the summertime, let me
just give you a tip, do it early in the
morning.
Because the air conditioners
have a hard time
when you try to heat up the house
when it's 90 something degrees outside.
I try to do it the earlier the better.
I love baking spray, and of course you
don't have to buy it if you can't afford
it, but what I do and what many of you
can do if you watch the sales is buy it
when it's buy one and get one free. All
right? That's what I do. I stock up on
it, and my kids even get some when they
come over to visit because I know I've
always got extra because that's when I
get it.
So,
I love this brand because it smells like
cake batter.
Going to get this poured in here, y'all.
And I mean, this is a good moist cake.
Yes, you can make
cupcakes out of it.
Or muffins.
Absolutely.
You can.
This is a big Bundt pan. It's a 12-cup,
so it doesn't look like there's as much
batter in there.
But,
it holds a big pound cake.
And that's why I have such a big Bundt
pan. Now, we're going to bake this at
350°
for 1 hour.
Great thing about a pound cake like this
is it's fast and easy for summertime.
So, you can get in and out of the oven
quick.
We'll see in a few minutes. We'll slice
us a piece right out of the oven, and
it'll be nice and delicious.
It's ready.
I'm going to go ahead and flip it since
it's a cake mix.
I wouldn't do it unless it's a cake mix,
but cake mixes usually stay together
real easy.
It's hard to mess them up.

Smells so good.
And now we get to turn off this oven.
And it's not coming back on today.
We're going to have an air fryer supper.
All right, here we go.
Pound cake.
Nice and brown.
But it cooks for an hour. If you don't
want it toasty brown,
then you can cook it less, but I like it
like I guess.
I mean, you don't cook it less. You just
cook it at a lower temperature.
I cook it long a long time because it
has so many bananas in it. You want to
make sure and get it done.
So, let's go ahead and slice it and take
a bite while it's hot.
That looks good.
Got a lot of pecans in it. It looks
super moist. And it was so easy.
And you can grab the butter if you want
to.
Make it even better.
