[music] I arrived at this place. I started working 9 years ago. I had some great Italian bosses here. The owners were Italian. They decided to close this business because they no longer had the time to manage it. I saw good potential in this business. Since I have knowledge of cooking in my country, in Ecuador, I am a professional chef, so I saw that there were some things missing that I was able to implement. now that it could be mine. And like migration, a lot of Latinos were migrating, I saw that they were migrating a lot to this beautiful state and I saw a good opportunity, I wanted to add some Hispanic food because besides that I saw the fact that in this state there isn't much Hispanic food for Latino people and to share our culture. The main thing is variety. People find a lot of variety, different from what came before. And the way it used to be prepared is totally different; I do it completely differently now. Toast. Well, what helped me a lot in this business, to keep this business going, is having knowledge, a lot of knowledge about cooking, everything related to temperature, contamination, having a lot of that kind of knowledge and I was able to continue and I can continue, I feel capable of running this business because I have a lot of cooking knowledge. I feel I've had a big influence because I can offer a quality product, a fresh product. Every day I'm the one who prepares it specially, and it's a Latin spot that people can come and find here in the mall, especially in the mall. They come with the confidence that they will be working with a Latino who can vary his style and has cooking knowledge, and they can come with peace of mind. What I hope for in the future is to be able to maintain it for many years, as long as I can. If they have that different experience in a little spot here in Ecuador, here in Bermontón, Sof Burlington, I want them to feel satisfied, well taken care of, simply satisfied, that's what I want them to feel.
