For my breakfast this week, I'm making a potato egg scramble. Keep it simple, high protein, well-balanced. You're going to need some eggs, salt and pepper, shredded cheese of your choice, a couple of medium potatoes, and a small onion. I am going to peel and dice my potatoes and dice my onion. I went ahead and added my potatoes to a pan. We're going to let these cook for about 12 to 15 minutes. We want them to start to get soft and crispy. I added my onion, salt and pepper, and we're going to let this cook until the onions are soft and the potatoes are finished cooking through. I added my egg. I'm going to let it sit for just a minute, then we're going to mix it all together, and then the last step is we're adding in about a half a cup of shredded cheese. And again, just let it sit for a couple of minutes. And there's our breakfast for the week. This looks amazing. I'm going to pair this with some fruit. For my lunch this week, I'm making an Italian hoagie pasta salad. I am super excited for this. There's someone else in this house very excited for this. So, you're going to need salt and pepper, penne pasta of your choice, little baby tomatoes, lettuce, light mayo, Italian dressing, red wine vinegar, and some garlic powder, provolone cheese, pepperoni, salami, and ham. The first thing I'm going to do is cut up all of my meats, cheese, lettuce, and tomatoes. So, everything is all chopped up, ready to go. I have my half of a box of pasta. We're going to cook it. We're going to let it cook fully, and then we'll drain it and rinse it with some cold water. For the dressing for this pasta salad, we've got half of a cup of mayo, half of a cup of Italian dressing, tablespoon of red wine vinegar, garlic powder, and a little salt and pepper. We're going to mix this all together, and that's going to be the dressing for the pasta salad. So, I added my drained, rinsed with cold water pasta to my bowl. We're going to add in our dressing, and just give that a quick mix. Just coat the pasta. Then, we're adding in all of our mix-ins. So, our meats, tomatoes, and lettuce, cheese. And then, give that a stir, you guys, and that's it. Super simple, high protein, delicious for the summer. Also great for any cookout, holiday party. This would be perfect to bring. So, you're just going to mix it all together, and then pop it in your fridge. You can also top it with a little parsley before serving. I will have the original recipe for the pasta salad down below for you. For dessert this week, I'm making a tropical dump cake. I love a dump cake. It is so simple. Again, a great thing to bring to any cookout or party. You're going to need a yellow cake mix, crushed pineapple, fruit cocktail, sweetened coconut, and butter or light butter. So, I went ahead and greased my dish. We're going to take our can of crushed pineapple and put it in the bottom, all of the juices of the pineapple. And then, we're going to do the fruit cocktail as well. And I did get the zero sugar added for both the fruit cocktail and the pineapple. Then, you're going to take your cake mix and sprinkle it on top. Just make sure it's all fully covered. You're going to take your melted butter, and we're just going to spoon this on top. Do your best to cover the majority of the cake mix. Then we're going into a 350° oven for 45 minutes. I just pulled the dump cake out, added a half of a cup of coconut flakes. We're going to pop it back in the oven for 10 more minutes. Here's the final dump cake. Oh my goodness, this looks and smells so good. Look at that. What a perfect fun tropical dessert.
